Perilla red pigment
It is made by purple perilla leaves through a series of procedures from leaves leaching, concentration , filtration, refining to sterilization .
The main compositions are shisonin and shisolanin.
The red or purple red liquid or powder has special aroma, is easy soluble in water and solution of water and alcohol.
In acidic condition it shows jujube red; in neutral condition it
shows light red brown to brown;in alkaline condition it shows green.
In addition, because of its good heat resistance, light resistance and salt resistance, the pigment has certain preservative effect.
Application: wine, carbonated drinks, juice, jam, candy etc.
